You can eat it for breakfast, it can be a snack or you can turn it into a simple dinner, with a yogurt next to it. When the time comes for a picnic, a pie with Greek yogurt and salted cheese could be the perfect snack while waiting for the barbecue.

450 g Danone Greek style yogurt

If you prepare the ingredients at hand, you will finish preparing the recipe quickly. You will preheat the oven to 180 ° C, so that you do not waste time after preparing the pie.

You can let the child supervise the mixer that will mix 6 eggs with a pinch of salt. During this time you can grate the cheese and salted cheese, then mix them.

You will ask the little one to add 3 Danone Greek style yogurts and he will mix until the composition is homogenous.

He will also add the cheese and mix with a spoon. The operation of lubricating the sheets with oil could be difficult, so it would be best for you to do this, then arrange a layer of 4 sheets in the tray.

If the sheets are a bigger idea than the tray, then you can wrinkle them a little when you put them in the tray. You will pour over the sheets a layer of the composition of eggs with Danone yogurt in Greek style and salted cheese.

Over this you will put another layer of 2 sheets, then yogurt cream with cheese and you will continue in such a way that you have 4 layers of cream and 5 layers of sheets. The last row of sheets will also consist of 4 pieces, as it was at the beginning.

If the little one had the patience to wait for you to assemble the pie, you can ask him to mix 2 eggs with 1 Danone yogurt in Greek style and you will let him grease the pie with it.

At this point you will put the pie in the oven and leave it for 35-45 minutes or until it browns nicely on the surface.

Take it out of the oven and let it cool, then you can slice it with a sharp knife.

From yolks, mineral water, salt powder, yogurt and 400 grams of flour, knead a smooth and elastic dough (if necessary, add 1-2 tablespoons of flour).

The dough is placed on the work surface greased with oil and divided into 2 equal parts.

Knead the margarine or butter with the flour (30 grams) until it is incorporated - the flour has no other role than to make the dough adhere better to the fat.

Take a piece of dough and spread it on the work surface greased with oil in a square sheet.

Half of the amount of butter or margarine is evenly distributed over the entire surface of the sheet, then cut two cuts on each side of the square, without completely detaching them.

Fold in half - first the smaller squares in the corners:

Each time it is covered with the opposite side to the one previously folded.

Once the corners are gathered in the middle, continue folding with the remaining squares in the middle of the sides, each time covering a square already folded with its opposite.

Repeat the process for each piece of dough (spreading, greasing, wrapping). Then, each piece of packaged dough is placed on a tray with the side to which the folds were made down, wrapped and left for 15 minutes in the refrigerator.

After 15 minutes, place it on the work surface well greased with oil, with the part on which the folds were made upwards, lightly grease (with a brush) with oil and this surface and spread the dough again in a square shape, making notches. identical.

Fold identically and refrigerate for about 30 minutes.

After this time, spread the dough (as with the second folding, greasing with oil) in a sheet of the required size (I made the pie in a 40/28 cm tray). I rolled the sheet on the rolling pin and rolled the rolling pin over the tray, thus placing the dough in its place.

I perforated from place to place with a fork (so as not to swell excessively when baking) and I placed the filling on top.

I placed the second sheet on top and cut the raw pie into pieces of the desired size, then I finished with egg yolk.

I put the pie in the preheated oven at 200 degrees and baked it until it browned nicely (45 - 50 minutes).

This cheese and raisin pie is a moderately sweet, effective dessert, the recipe is simple, quick and does not require any complicated preparation techniques. I used sweet cottage cheese to which I added vanilla, lemon peel, raisins and / or cranberries. The sour cranberries were an extremely pleasant surprise. I imagine how good it can be with candied orange peel (the recipe here). Sweet cow's cheese can be one in a bucket or one bought on the market from producers. If you do not have access to such a thing you should know that it can NOT be replaced with ricotta or urda because the latter has other characteristics (see here). I used 12 thin sheets of pie (not puff pastry!) And my tray is 25 x 30 cm.

The filling should be creamy but firm, not crumbly. I mixed cow's cheese (well drained) with telemea and grated cheese + 1 egg. If you want a more spicy note, you can also put kneaded or bellows cheese.

I used approx. 500 g of puff pastry dough divided into 2 sheets. From the first I made 15 pies (squares) and from the second 25 wheat ones.
